Keto Pancakes

What a delicious Sunday morning treat, thanks to my hubby (credit prompt by him!😂). These delicious pancakes are gluten and dairy free. Clean and packed with nutrients.

Keto Pancakes

INGREDIENTS 
- 1/2 cup of almond flour
- 1 tablespoon of baking powder
- 1/2 teaspoon of cinnamon
- 1 overripe banana
- 1 egg
- 1/2 cup of dairy free unsweetened milk

TOPPINGS
- Coconut yogurt
- Strawberry’s 
- Mint leaves

METHOD
Mix all dry ingredients in one bowl, mix coconut milk and eggs in another bowl, then slowly pour & stir into the dry mix until smooth, mash the banana, then add to the rest. Coconut oil for cooking and dessert sized spoonful of mix into medium heat frying pan. When you see bubbles on top of the pancakes you can flip them over (don’t try and move them before). Then about 30 seconds on the reverse side and pop onto a drying rack or plate. Add your desired fruit, yogurt and mint leaves and enjoy!
