Keto Fry Up

You can’t beat a keto fry up.

I don’t often have the appetite for one of these first thing in the morning, as I’m usually fasting until lunch, but I’m quite partial to a brunch!

Keto’s principles are low carb, protein and fats, so this brunch delivers all of that.

The cheese is optional, the rocket leaves are crucial and a glass of orange juice is great with this to increase your body’s ability to absorb the iron by three times.

Keto Fry Up

Prep time: 5 mins Cook time: 10 mins Total time: 15 mins Portions: 1

INGREDIENTS

1 egg

5 rashers of streaky bacon

Large handful of rocket leaves

1/2 Avocado sliced

Few slices of cheese of your choice (optional)

Glass of orange juice (optional, or squeeze of lemon juice on top of avocado)

METHOD

Heat up the pan, with a good drizzle of olive oil, once hot, layer your bacon slightly over lapping each other, cook until crispy, probably about 7 mins. When the bacon is almost done, fry your egg. While those are finishing, halve the avocado, and slice, along with the cheese and place on your plate ready for the proteins. Once the bacon is ready, add onto to a kitchen towel to mop up excess fat. Add your leaves onto the plate along with your streaky bacon and fried egg. Delicious!
