Grain, Dairy & Soy Free

What a delicious Sunday morning treat, thanks to my hubby before a client session (credit prompt by husband 😂)

INGREDIENTS 
- 1/2 cup of almond flour
- 1 tablespoon of baking powder
- 1 tablespoon of sugar (optional) 
- 1/2 teaspoon of cinnamon
- 1 overripe banana
- 1 egg
- 1/2 cup of Koko (unsweetened coconut milk) or similar

TOPPINGS
- Coconut yogurt
- Strawberry’s 
- Mint leaves

METHOD
Mix all dry ingredients in one bowl, mix coconut milk and eggs in another bowl, then slowly pour & stir into the dry mix until smooth, mash the banana, then add to the rest. Vegetable oil or Pure (dairy free spread) for cooking and dessert sized spoonful of mix into medium heat frying pan, when you see bubbles on top flip over, then about 30 seconds on the reverse side and pop onto drying rack. Add your desired fruit, yogurt and mint leaves and enjoy!
