Rebalance your pH levels with Spinach soup.

Why do I want to rebalance my pH levels? Maintaining your pH levels is vital for a healthy body, as an acidic body is an incubator for disease. Generally we want to have an alkaline bias, but we don't want to be too alkaline either.

What is pH and what does it mean?

'p' stands for potential and 'H' stands for Hydrogen. Meaning if you are too acidic, you won't attract enough hydrogen, or if you're too alkaline the body will pull too much on hydrogen.

The total pH scale ranges from 1 to 14, with 7 being considered as neutral and ideal. A pH less than 7 is said to be acidic and solutions with a pH greater than 7 are alkaline. Our ideal pH is slightly alkaline - 7.30 to 7.45. You can test your pH levels regularly by using a piece of litmus paper in your saliva or urine first thing in the morning before eating or drinking anything.


Going green! Spinach, is very high in Chlorophyll aiding alkalisation and restoring your pH balance.

Chlorophyll is also a brilliant natural anti-inflammatory and good for eye health. Its high water content, high fibre, low carb ratio make it a great food to aid weight-loss, or if you're about to start or come out of a detox or a fast. I also like to add Chia Seeds to my soups and sauces as it not only acts as a thickener (no flour needed) but also helps keep you fuller for longer.

However, the misconception of spinach being high in iron isn't that accurate (see chart below), if it's iron you're looking for you want to aim for liver, kidneys, seafood or beans.

Actually our gorgeous leafy green is incredibly high in Vitamin K, which is great for the heart, preventing hardening of the arteries and osteoporosis. As it acts like glue, by plugging calcium into the bones.

Recipe + Method

  • 50g butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 medium potato, peeled and chopped into chunks
  • 450ml chicken or vegetable stock
  • 600ml coconut milk
  • 450g fresh spinach, washed if necessary and roughly chopped finely grated zest of half a lemon
  • Chia seeds
  • freshly grated nutmeg, to taste
  • 3 tbsp double cream, serve and enjoy on a wintery day!
